We went on a journey to find the highest-quality producers for every single product that we put on our table.

We found them.

This journey began with a devotion to the purveyors whose hands carry expertise and love into everything they make. There is dreaming, growing, and trial and error in this work, which is exactly what makes every product unique.

If you are here, you believe, as we do, in the power of the human hand working in harmony with nature.

We collect sea salt from the natural cavities of the rocky coastline in Kythera, cold-pressed olive oil from mineral-rich soil on the Messinia slopes, and wild thyme honey from some of the rarest and most remote locations.

We are investing in the long-term vitality of the planet and people. We choose to work with farmers who nourish their soil, protect the biodiversity of their land, and care deeply for the sustainable future of our planet. It is no secret that the healthier the soil, the healthier our bodies.

All our products are harvested in season, when Mother Nature allows. Good things need sun, soil, and patience. We do not force things to happen out of season. We respect Nature’s rhythm and let things grow in their own time, beautifully imperfect and full of life.

We believe food should come with a face, a place, and a story. That is why we choose local farmers and small family businesses who pour patience, love, and stubborn care into their land. Supporting them is part of our responsibility in serving something truly good.

We always prioritize quality over quantity. Small batches allow growers to look closer, pick better, waste less, and protect the flavor, aroma, and ripeness that mass harvesting so often leaves behind. Sometimes, products are so rare and precious we don't have an option.
